Foundation Certificate in Food Hygiene -14th March

(Spr FH1)

Level 1 Award in Food Safety Awareness in Catering

Overview

The CIEH Level 1 award in food safety is run as one day course, suitable for a variety of candidates, including new employees with minimal or no prior food safety knowledge, employees handling low-risk or wrapped food or those who work front of house, such as waiting or check out staff, as well as back of house such as kitchen porters or warehouse staff.

The training programme covers the following topics:  
  • Food Safety (food hygiene, hazards, responsibilities)
  • Personal Hygiene
  • Cleaning
  • Contamination

Qualification information

The Level 1 awards in Food Safety are sector specific and the training programme has been developed to allow courses to be tailored to meet the needs of staff working in catering, manufacturing or retail environments.

Duration: One day 9.30 -4.30

Assessment method: 15 multiple choice question examination

Level 2 CIEH Award in Healthier Food and Special Diets -19th & 20th April

    Overview
    The UK Government is committed to tackling death and ill health caused by diet-related disease. Important to this is ensuring caterers understand the link between diet and health. This qualification has been designed to provide a good, basic understanding of nutrition. This course is suitable for all in employees in catering, healthcare and education sectors who have involvement or responsibility in the selection of ingredients, menus and recipes.

    Outline of programme: the qualification covers the following topics: 
  •  Good basic understanding of nutrition principles and terminology 
  •  Understand the requirements of a balanced diet and it positive effect on health
  •  Identifying differing needs, allergies and food intolerances
  •  Appreciate that different groups of people require different diets to suit their lifestyle
  •  Knowledge of the requirements of the current legislation
  •  Understand the impact of food processing and manufacturing on the nutritional content of foods
  •  Appreciate the importance of accurate nutritional information being available on food products
